This Sparkling Brut has been made in the traditional method from Chardonnay and Pinot Noir grapes from our Huonville vineyards. The cool, low-yielding 2021 vintage provided perfect conditions for gentle ripening of the fruit, and the resulting wine which has had two years on yeast lees has a lifted citrus and brioche aroma with a soft, creamy and crisp palate. Perfect as an aperitif and for celebrating. Drink now or cellar for up to ten years. – Producer’s Notes
