Momento Mori have become an iconic natural wine label. Husband and Wife team, Dane and Hannah Johns have a small vineyard in Gippsland that they live and work on. With an ethos of “simple desire to make wines that first and foremost have respect for the living.” They farm chemical-free, with strictly organic principals. Anything they don’t grow themselves is sourced carefully from like-minded growers throughout Victoria. The wines are made in small batches, using wild yeast and with every part of the process done by hand.
True Love Waits is a blend of Nero, Sangiovese, Lambrusco and a touch of Syrah. Each variety was fermented and aged separately in either stainless steel tanks or Amphora. What you would expect to be a big red blend is quite the opposite, presenting as a pale red colour, it’s light and juicy with lovely structure.
