Nikau Farm is a 95 acre property in the Baw Baw region of Gippsland is home to Dane (of Momento Mori Wines fame) and his family. The property has two 0.75h plots of vines on it, both about 35 years old.  Neither of these plots (or the farm as a whole) have ever been subjected to herbicides, inorganic fertilizer or the like and have been farmed organically since they were planted with a philosophy of ‘less is more’.

Adjusting over 15 years of wine making and 6 vintages out of this site have led to these bottles.

45 year old vines make this one of the oldest pinot vineyards in Victoria. The vines are cane-pruned and grown on weathered granite in a spectacular and isolated location.

No oak and no additions, no manipulation of the must during fermentation were the most important missions for Dane going in to the making of this wine.

The soils of the home block are effectively ancient sea beds which seem to give the wines a complex minerality and structure.
The fruit was hand sorted and hand destemmed and then cold soaked for 48 hours so as to start fermentation very slowly. It spent only 6 days in that state where it began ferment and was then pressed to a small stainless steel tank to finish ferment as juice.The resulting wine is extremely elegant in structure with depth and complexity. It’s fresh, energetic but has so much going on at a such a fine scale.
