A Sauvignon Blanc dominant blend that’s fresh & clean but with lovely body & structure from the Chardonnay. This is a blend of 3 separate components from Ephemera Wines all made from Yarra Valley fruit.
-63% Barrel fermented Sauvignon Blanc
-27% Barrel fermented Chardonnay
-10% Tank co-ferment of 70% SB / 30% Chard
So essentially it’s 70% SB and 30% Chardonnay but it’s a blend of 3 separate components.
A zippy easy drinking white with some subtle complexity & texture. The Sauv Blanc dominates the flavour profile whilst the Chardonnay provides extra structure and depth. On the nose there’s zippy Passionfruit, lime & sweet cream/marscapone. Like a Passionfruit cheesecake. Even a little hint of sweet pastry most likely coming from the barrel fermented elements. Similar flavours follow through on to the palate. It’s zippy & fresh with a creamy leesy undertone. A perfect house white. Something you can knock back with ease or if you look a little deeper it’s actually got some complexity & depth to explore.
