100% Dolcetto from Bittern Estate on the Mornington. The wine starts fermentation naturally in old barrels, it spends four days on skins and is then pressed of back to barrel. From there it is moved to bottle, given a light dose of sugar and fermentation starts again to give the wine its effervescence. The wine is full of raspberries, plums, strawberries and cream. With a little herby, spicy twist on the finish, the wine is bright and fresh with a dry finish. – Suppliers notes
