Luna was the first wine we ever made, back in 2017.
This is only our second vintage, but not for lack of trying. It’s just the first time in the last 5 years we’ve come close to recreating Luna. Luna is truly special.
To make it, we let Sauvignon Blanc juice spontaneously ferment for 9 months on the skins of Chardonnay, Sauvignon Blanc, Riesling and the pomace of Hyslop crabapples.
We aged this vintage for an additional 3 months in clay amphora.
What’s it like?Luna has a delightfully complex nose: mandarin pulp, lychee and dried plantain. It’s restrained, but tastes of spice, marmalade, fresh cream and chalky apple tannin. Chewy and warm.
After 3 months in clay the acid has mellowed, a slick salinity taking its place. Gentle and spiced, this wine is drinking beautifully now, but will cellar incredibly well. – Ibi
