Cool and later season with slower ripening allowed the intention to gain further physiological ripeness an easier decision to make. De-stemmed and left for a 8 day soak with gentle cap wetting. Pressed to old oak and left to rest on full lees left sous voile
(un-topped). Wine blended and bottled early spring.

3rd harvest.
550 metres above sea level, protected by winds around, SE facing and cool nights. Clay soils, white quartz and schist. Ever so slight oxidation, ginger prickle on the tongue, marzipan nuttiness courtesy of lees contact, quenching apple pie acidity. – Scintilla Wines
