Chardonnay and Savagnin grown on deep glacial sands. All direct pressed and barrel fermented. Elevage in the same barrels for 2 years, then a further 6 months in tank before bottling in August 2022. An exercise in patience.
Time has been kind to this wine and it’s only getting better. Lax topping throughout its tenure in wood, yet only subtle rounding from oxygen. It remains very mineral and saline. I’d encourage pre-emptive opening of this wine and letting it breath for as long as possible. – Producer’s Notes
