Quince aroma is usually described as similar to citrus, vanilla or apples.
You’ll find all of those here, but for me it’s guava all the way. Quince are a wildly aromatic pomme fruit rarely seen in North America orchards.
When raw they’re incredibly hard—so hard that we couldn’t put them through our mill, even after letting them ripen for weeks. The fruit was asking to undergo carbonic maceration and we were happy to oblige.
32 days of carbonic maceration softened them and enhanced their unique aroma even further. There aren’t many fruits that can grow in a temperate environment, but taste like they’re from the tropics. Quince is a special treasure. – Revel
