INSPIRATION
Our brewery has foundations spanning the worlds of both beer and wine. For us, wine-hybrid wild ales are a way to celebrate what we love about both, and to explore the seemingly endless possibilities this brings.
The can art for this beer was created by Benjamin Knock – a Melbourne-based street artist and old friend of La Sirène. Benji’s art greets all who visit La Sirène in Reservoir, including the iconic mural that adorns our front wall.
Much like our wild ales, Benji’s artworks captivate the imagination and bridge the gap between surrealism and our natural environment.
MÉTHODE
Whole destemmed Savvy Blanc grapes from Geelong were fermented spontaneously along with a simple barley-malt base wild ale. After weeks of skin contact, the beer was gravity-fed to premium French oak barrels for 5 years to ripen.
Canned for a special release as part of Benjamin Knock’s March 2025 Senectus Tempus exhibition opening.
TASTE
Pours a hazy straw colour with characters of fresh apricot and citrus, pineapple, guava, passionfruit and oak. The palate is fruity and tart, balanced beautifully with savouriness and a fresh acidity, plus a light touch of orange blossom, nutmeg and rosewater.
Pair with pan-seared scallops, Portuguese chicken, ceviche, fresh green vegetables. – La Sirene Brewing
