Avant Garde Collection is our permission to explore, experiment, infuse, co-ferment, wild ferment, distill, macerate, battonage and purposely cellar beers in bottles – an exploration & study of bottle ageing and intra-bottle transformation.
We purposely left barrels & wood ageing out of the equation with the intention to embrace the subtleties (and overtness in some cases) that can eventuate with time and patience when various local & wild strains of yeast/bacteria are allowed to blossom, impart and express themselves in the beer without any oak or wood (or overt malt/hop characters) to steal the show. – La Sirene Brewing
