Hillwood has a few characteristics that make it a specialty and unique product that resonates with us here at Mr West. They are a completely independent project by father and two sons, with the entire operation carried out by hand, on site, at their Hillwood property, just north of Launceston Tasmania.
That includes growing, harvesting, malting, fermenting, distilling, maturing, and bottling. Even the water source is naturally filtered ground water from the property, flowing from a glacial underground spring.
The team have produced a short selection of cask strength cask finishes. These guys are showing talent and will improve as they hone their craft.
The Pinot Noir cask finish comes in at a special back bar strength of 45.5% abv. Showcasing heaps of red fruit, chocolate and nuts.
