Pale with a light mousse, the nose shows restrained fruit of honeyed melon sitting above a yeasty/toasty base. Super rich and textured palate with hints of pears, apples and melons and a very large ‘honey on toast’ mid-palate and a slightly phenolic finish.
The second release of Bubbles and Co once again blends fruit from the Yarra Valley and Merbein. This release 78% Chardonnay (Yarra), 15% Vermentino (Merbein) and 7% Sauvignon Blanc (Yarra). The Chardonnay is a combination of both tank and barrel-fermented wine from the 2017 vintage as well as a small amount of 2016 for added complexity. These components form the backbone of the wine and give a sense of verve from the acidity. The Vermentino component is from 2016 and came from Chalmers in Merbein. It contributes apple and pear characters and the toasty/doughy element in the mid-palate. – Save Our Souls
