We had been thinking about playing around with Cascara for a while, so when Kensington neighbours and industry legends, Rumble Coffee Roasters, offered us some fruit grown by a famous 3 generation Colombian coffee family, the colouration seed was planted.
The Cascara comes from the Colombian natural process trailblazers, Finca Villarazo. Hand-picked, fermented and dried for 15 days, they offer a delicate and earthy candied berry, raisin and spice nose that subtly screamed Berliner Weisse. With some light stone fruit to round out the flavour, that seed has grown and blossomed into a delicate Cascara and stone fruit bouquet, grounded by the Berliner Weisse lactic souring, a perfect springtime iced tea. – Bonehead Brewing
