Double decocted Helles style lager. This is truly a beer that we think shows our natural evolution of lager brewing. We started brewing lagers back in 2017 purely to have an option for the lager drinker or the friend that wasn’t really into “craft beer”. Since then we have fallen more and more in love with the style & the finesse it requires. This beer shows all that progression in one. We started with a double decoction mash a process, which we have not been able to attempt on our previous brewhouse. This gives the beer a really complex malt profile, meaning we can keep the malt bill simple & refined but at the same time draw an enormous amount of character from the malt while keeping the beer dry & incredibly drinkable. think of it as big flavour up front that fades without lingering for ultimate drinkability. We then fermented this beer at the lowest range our lager yeast is happy at. a slow drawn out fermentation creates a smooth & clean fermentation profile as the yeast is not stressed & happy to do its job in the best possible conditions. then finally we lagered & naturally carbonated this beer for 7 weeks to round out the whole process. the beer spent 10 weeks in tank in total. 8-10 weeks we feel at banks is the ideal tank time for a beer of this style & calibre. we truly hope you enjoy this beer as much as we do in all its beauty.
