Micah Hewitt is the winemaker (and everything else) behind the label DEFIALY: “Don’t Ever Forget I’ll Always Love You”. Micah describes his wines as handmade, no-tech and minimal fuckery. His ideology is to start with great fruit and let it do all the talking in an honest representation of time and place. Which we are all about as big lovers of how terroir is expressed in wine.
He purchases some fruit for his standard Defialy labelled stuff but anything under the Domaine Defialy label is fruit he has grown himself in the Macedon Ranges. 2023 was a very challenging, very low yielding season, and yet Micah has still delivered this stunner of a Pinot Noir.
10% whole bunch, 2 weeks on skins, 12 months in oak , 2 months in stainless with a very small amount of SO2 added before bottling. Nice and light with a present acidity. Heaps of lively fruit up front, with raspberry, plum, a touch of florals and chocolate. Long lingering finish with some leather and earthy notes.
