Pat’s Refosco dal Peduncolo Rosso is sourced from three rows in the southeast corner of the Chalmers vineyard on the ultra-red soils common to the area. The rows were planted in 2015 with an east-west orientation, which moderates the impact of the midday sun. All the fruit is destemmed and ferments in closed stainless-steel vats over three weeks. The wine is pumped over daily, with plenty of splashing and careful exposure to oxygen. It is pressed when the phenolic structure is just right, in this case after four weeks, and the wine matures in tank and then barrel. “It’s a great iteration of this wine with lovely fruit concentration,” says Pat.
