100% Mourvèdre. The Watkins Family Vineyard in Langhorne Creek is the source here. The vines are 35 years old and the soils are rich in limestone. Whole bunches were foot stomped before being placed in a 2,000 litre wooden vessel for fermentation. The ferment was gently foot plunged once a day for three weeks before being pressed to 800 litre clay eggs for maturation.
