Grown by us at the Finyard in Dixons Creek. Situated on Wurudjeri Land of the Kulin Nation, who are the traditonal owners and custodians of this land.
This block is on a south facing slope on a mixture of sandy grey loam and heavy clay soils. The vines are own on their own roots and are probably the hardiest variety on the property. Regardless of the difficult growing conditions during this year (high rainfall and flooding, followed by long periods of intense heat) the Cab Sav and Cab Franc produced a spectacular crop.
For our rosé we hand pick, then straight press the whole bunches very lightly, resulting in a rosé light in colour with finesse and delicate flavours. We choose these varieties for rosé because of their slow ripening, resulting in naturally higher acid with lots of flavour. – Fin Wines
