Fruit grown with pride in Whitfield by John Darling. One of only two Aligoté vineyards in the state of Victoria. Hand picked, crushed and barrel fermented in old oak. We loved the natural acidity in 2021 so made the decision to pick earlier and make the wine in a more oxidative style. We did keep the barrels topped however we only added SO2 just before bottling. A wine that has all the classic Aligoté aromatics such as citrus, mountain herbs but with the added complexity of ocean spray, cashew nut with a linear and fine palate. A little spritz from CO2 but dissipates quickly. – Terrason Wines
