Sweet peach, white florals, Frosty Fruit and honeydew on the nose creamier on the palate but not without refreshing acidity. sage, biscuit and salinity to finish and linger. Whole Bunch Chardonnay was direct pressed and cold settled overnight before racking off rough lees to stainless steel for primary fermentation. At 2 Baume we racked into seasoned French barriques with gentle stirring on lees once a month for 7 months during elevage. Racked off lees and let to settle in tank prior to bottling in September of 2021.
