After starting their winemaking journey with James Erskine of Jauma, Alicia and Mark have well and truly built their own reputation with Borachio, sourcing organic grapes from Mount Compass and Mount Torrens in South Australia to make light, elegant, playful wines with a cheeky soul. Zero additives and zero fuss.

Savagnin grown on deep sand. A wild place. All direct pressed to barrel for fermentation, followed by a year of rest. A further 8 months in tank before bottling in September 2022. Linear and salty, rich and voluminous in the right places with great length. Juxtaposed, but so correct. While this wine cold and fresh with oysters is a treat, I think you’d do it a disservice not to open it and take as long as you can – it has a lot to offer. This wine is not a tribute. – Borachio
