A dainty and fragrant expression of Sangiovese with brilliant red fruit, spice and gentle persistent tannins. Grapes grown by Troy McInnes of Chalmers Vineyard on the eastern slopes of the Camel Ranges, within the Heathcote GI. Fermented in two parts: a 4 week maceration of destemmed berries pressed and aged in seasoned barriques and a whole bunch carbonic maceration pressed after 14 days and aged in puncehons. Barrel aged for 10 months. Bottled with 30 ppm sulphur dioxide. Bottle aged for 5 months. – Minim
