Calyx wine is produced, and the labels letterpress printed by Yuri Zinenko in a small shed surrounded by an acre of vines in Keilor, Melbourne. Everything is done on-site, by hand with help from his friends and family. The 2019 rosé is made from early picked Syrah, lightly macerated and then pressed to oak with fluffy lees. Aged in old white oak for eight months. Only 10ppm sulphur added at bottling, with no filtering or fining. A luscious and creamy rosé with flavours of stone fruit, strawberry, oats & nuts. Reminiscent of yoghurt topped fruited muesli bar. Delicious!
