Short maceration, a component of each variety has spent 10 months aging in older oak, assemblage prior to bottling. Like the BN, the cepage changes each vintage. Brambly black fruits and plums, fresh & tart with an underlying earthiness. Mediterranean garrigue, fine tannins, plump fruit, a whisper of oak, slippery with refreshing acidity. Unfiltered, unfined and vegan.
