Many years before Cloudwater came into existence we were inspired by the brilliant minds of Hans-Peter Drexler of Schneiderweisse, and Garrett Oliver of Brooklyn Brewery, who came together to brew Hopfenweisse, a term fashioned by Garrett himself.
The resulting beer stood out in a sea of UK hoppy beers made with restrained or entirely neutral yeasts – often contributing little flavour to the beer, left in the shadows of both hot and cold side hopping.
In our early days we looked at Hopfenwiesse as pointing to a bolder future of beer, where rich and protein heavy malt grists, forward-thinking modern hopping, and flavourful yeasts contributed their all as powerful, equally capable allies in pursuit of the most robust flavours in beer. Long before we even knew NEIPA was a thing, Hopfenweisse lit a bold trail in front of us.
