The second of two variants for St Phoebe 2024. This variant was made by blending barrel aged golden mixed culture fermentation ale with 160kg of organic, fresh, whole, tree ripened, Mariposa plums from Moonacres Farm Fitzroy Falls, NSW. After a five month maceration and refermentation of fruit and beer, it was bottled and allowed to naturally carbonate and mature before release.
Tasting notes by Meesh: A perfectly lovely blush pink in the glass, with a fairy floss sweet candied plum nose. On the palate it’s true to a lovely ripe plum, some sweetness and a light floral note, met with a fresh tartness. It’s light and clean, inviting you back for more. Some have said you could even call it beach juice.
