Named after the great Biwa Lake in the Shiga prefecture, the largest lake in Japan, The Whale of Biwa Lake Sake has a distinctive rich and fruity flavour profile. Crystalline, shimmering pale lemon colour in the glass this sake would pair well with fatty fish dishes such as grilled eel in a flavourful Asian marinade.
Nose: Initial aromas show sugar snap peas, a hint of lime zest, green melon, though it’s quite restrained. After time an earthy mushroom and rice bran element emerges.
Palate: Tasting chilled it’s all very restrained, though as it warms the wheat and grain elements develop, supported by the pithy green fruit notes.
Finish: On the finish the robust nature of this sake is more apparent, and the depth of savoury notes work well with the lean fruit profile.
