We teamed up with our pals at Hop Nation to produce a beer inspired by the infamous Footscray fixture – T. Cavallaro & Sons. We decided on a white stout using additions of cacao nibs, vanilla beans, lactose and biscuit malt to emulate the Cannoli flavours. Available on tap only.

The first of our two collaboration styles with 3 Ravens’ is part of  their Nat Rav series and is a more traditional Lambic style barrel aged sour which is a blend of a golden sour on Chardonnay skins and sour red ale on Cabernet Franc skins. Available in 750ml bottles.

The 2nd part of our 3 Ravens collab is an uber-modern sour using a portion of the same grape skin as the Nat Rav plus all the latest tricks & hyped trends we could think of. It is called… PEAK HYPE – TCDHWGSCBBMOCSNEIPA. Who can guess the style abbreviation? Available in 440ml cans.

For the 2nd release of our Good Juice Party Bagnums we teamed up with our mate Tim Sproal from Minim Wines. We ended up settling on a blend of carbonic macerated Shiraz, saignée Shiraz and skin contact Vermentino. This red/white blend is light & juicy yet packed with flavour available in 1.5 litre party bagnums and on tap during the festival.

2019 Spring Parlay Red Ale aged in Apassimento barrels. Dollar Bill have created a complex sour red ale primary fermented in stainless then aged 8months in barrels used to create some ofAustralia’s finest desert wine. Available in 1.5 litre and 3 litre magnums.

2018 Grand Cru. A blend of 2 year old mixed fermentation and, barrel aged saisons fermented in pinot noir and chardonnay barrels aged in refurbished oak. Available in 1.5 litre and 3 litre magnums.

Another Footscray inspired collaboration, this time we teamed up with Small French Bar & Molly Rose Brewing.  We decided to brew a light, clean, easy drinking French table beer (Session Saison) with some extra French-ness added due to the additions of lavender, chardonnay & orange. We aptly named it… Small French Beer. Available on tap with bottles launching soon!

Inspired by THE classic Italian Spritz, this beer is brewed with a bright, clean, yet plush body balancing harmoniously with fresh orange zest, rhubarb and botanicals. Finishing with a zippy, driving acidity. These tasty bottle have been resting for 12 months for added complexity. Available in 750ml bottle only. Extremely limited!

Our Milo Milkshake Breakfast Stout collaboration with Collective Arts was given a coffee & nitrogen makeover by Tallboy & Moose for Good Beer Week earlier in the year and we are super excited that it is making a come back on tap for Mr West Fest!

The second collab with our Canadian mates, Collective Arts was brewed for this years Good Beer Week but we squirrelled away a couple kegs and we’re putting it back on for Mr West Fest. A super delicious sour loaded with strawberry, passionfruit, mango, vanilla & lactose. Come grab 1 (or more) last glass before it’s gone forever!

Established in 1956, T. Cavallaro & Sons have been a part of the Footscray landscape for over 60+ years. During this time they have perfected the art of cannoli making.
