Mirabelle is a cider we made with local strawberries and organic lemon verbena. Lemon verbena was the key botanical that opened our eyes to the possibility of getting tropical fruit flavours out of ingredients grown locally. And lemon verbena seems to encompass all the best parts of a lemon: zest, juice and blossoms too—without the acidity. It lifts the strawberry aromas and melds with them in sublime botanical beauty. Mirabelle is so so cool. The strawberries here are late season instead of early strawbs—and they’re absolutely mouthwatering: low acid and jammy fruit character. – Revel Cider
