Using a blend of French saison and farmhouse yeast this saison was fermented in stainless steel before being matured in barriques and continued to ferment with the Future Mountain house culture. Normally this culture adds layers of acidity to the beer but the hopping rate of the saison has inhibited bacteria growth and allowed the several brett strains to create a dry, complex and funky barrel aged saison.
