Commune of Buttons are one of our favourite producers from the Adelaide Hills. A brother and sister wine making duo who took over the family property they grew up on to start a legacy of generational wine-makers. Paying close attention to the Earth, sun, moon and rain cycles, they have been using organic practices for over 12 years. Creating beautiful, balanced, fun wines that we’re excited to get our hands on every year.

This Vermouth is the result of a project started back in 2021 vintage. Where the folks at CoB distilled some of the chardonnay from the previous year to make spirit. This spirit was then used to arrest the primary fermentation of the 2021 Chardonnay grapes at 30g/L residual alcohol. Followed by the blending of tinctures, made from a variety of home grown and hand picked herbs, in to the Chardonnay wine and spirit base. It was then aged for 2 years, 50% in Barrique, 50% in tank. Finally landing it in our hands this year for us to pass on to you.

Slight spice and tons of herbal aromatics, savoury, bitter, and fruity, but not sweet. Superbly balanced.
