Fin Wines is a fermentation collective, based in the Yarra Valley, producing natural wines and ciders with an emphasis on drinkability and sustainability. They produce young, super drinkable wines using lo-fi methods.
A blend of Roussanne, Sauvignon Blanc & Viognier, from various vineyards that Fin work very closely with. Handpicked and pressed to a 50:50 mix of oak and stainless steel where it is left to wild ferment. With the sauvignon blanc spending a week on skins prior to pressing.
Dandelions & Bumblebees is fresh and zesty, but still really nice and textural with a touch of oxidation. Heaps of fruit forward flavours like pear, citrus and fleshy white stone fruit. Hints of meadow wild flowers, possibly dandelions, with a beeswax texture.
