Sangiovese clone from cuttings taken from the small vineyard (La Vignola) in my great-aunties vegetable garden in Tuscany. Planted at 3300 plants per hectare and worked organically with the aim to achieve full certification by the 2026 harvest.
The 2022 La Vignola was picked on the 30th March and immediately 100% destemmed to a stainless steel fermenter. Fermentation was slow but steady and it stayed on skins for 16 days. It was then direct pressed to 1500L Slavonian Oak barrels where it took more than 13 months to complete malolactic fermentation. After 18 months of elevage it was racked cleanly out of barrel to settle for two weeks before being bottled with a minimal addition of sulphur. Unfined and Unfiltered. – Stefani Wines
