100% Pinot Noir. The Deanery Vineyard is located in the heart of the Piccadilly Valley. It faces east and has red clay soils overlying sandstone. The fruit saw 100% carbonic fermentation for six days in a 2500-litre fibreglass tank. The free-run juice and a portion of the light pressings were then placed in 800-litre ceramic eggs to finish fermenting and mature. – Suppliers notes
