Les Deux Moulins is a subsidery of the Paris Wine Company, run by founder Joshua Adler. Featuring custom bottlings made in collaboration with select French producers. All of the Les Deux Moulins wines are either 100% sauvignon blanc or 100% pinot noir, and each year the company tastes and selects the best cuvées for the label.
Vinified at very low temperatures in stainless steel, the focus of the winemaking is to add structure and body in the palate and to not over characterise the nose. The chalky minerality, grapefruit, pomelo, and green apple tones lean this wine more towards a Chablis than Loire Valley Sauv.
