This is our first release, Premier Aligoté. We are fascinated by Aligoté’s ability to age. This wine spent close to twelve months in old, seasoned barrels, then another six months in the tank. The lees don’t dominate but tighten everything up. The wine is surprisingly delicate, inward, almost a little nervous. This wine should easily see a decade in the cellar.
Again, the wine shows classic Victorian Aligoté aromatics of spice, apple, pear and just a hint of candle wax. The palate is textured, which has become a bit of an ongoing theme with this vineyard, helped by the fact that we don’t separate pressings and age on full solids. We are also fans of oxidising the juice before fermentation, and 100% malo-lactic fermentation which plays a part. – Terrason Wines
