4 year old solera barrel of Flo’s Fizz Pet Nat. Each year some is taken to make this wine then replaced with the new season blend to age a further year.
Blended to fill an old french oak puncheon, bottled mid summer. This cuvee replaces Forever Young. We felt the process of carbonation through bottling the following season disguised the tensile complex nature that excited us about this project. On the surface its fun pink wine. A little time in glass reveals a very layered and complex drop. Honey, walnuts and porridge.
