2021 Boomtown White is a continuation of our developing theme; drinkable, refreshing textural whites that are non-varietal yet distinctly Central Victorian. Leanganook Chardonnay is on show here, with a fresh and aromatic lift coming from a smaller parcel of Riesling, grown on the same decomposed granitic soils 500 m above sea level within Dash Farms vineyard. This years release included a single barrel of Pecorino from Chalmers Heathcote vineyards, adding a savoury burnt orange peel spice to balance the more subtle aromatics.

Both wines were pressed as whole berry to tank and chilled, with the chardonnay racked off solids to barrel for fermentation. Elevage for 3 months in both tank and barrels then racked cleanly in early winter with a whiff of sulphur and bottled under cork. Some generosity on the palate, balanced with plenty of natural acid, a perfect house white for a hot central vic summer.
