The grapes for Alice’s Hip, Hip J range of wines are from a local organic grower in Pupillin she has been working with for several years now. This is a very beautiful expression of this delicate variety from a good vintage. Carbonic maceration with whole clusters for one week. First she took off the juice and then, blended it after pressing. The wne is quite limpid and only 10.5% ABV, a level of alcohol that suits the light extraction.
