2020 ‘Vin de Fin’ Pet Nat, made from Viognier, grown in Tabilk, Goulburn Valley. Handpicked then straight pressed into stainless steel. We bottled this at the tail end of ferment when there was around 12g/L sugar left in the ferment. Spent 4 months on lees, in bottle before being disgorged. Spontaneous ferment, no additions, no SO2. A royal pudding. Apricots and crème brulee, Showered in a plume of white blossoms, with a profusion of bubbles. – Fin Wines
