This wine is fermented spontaneously from indigenous grapes. Hand-harvested into small bins. Maceration of ten days. Aged in 100hl cement tanks for one year. Bottled with minimal sulphur (36mg/lt) and without fining.
We are Fausto and Cinzia Cellario, we cultivate 13 hectares of vineyards and some hazelnut groves in the southwestern part of the Langhe, Piedmont.
We strongly believe that our limestone land can give us unique wines, so we try to respect it in a total way, we like to be called “Dolcetto specialist!” from the vine that we mainly cultivate, Langhe tradition
