Sauvignon Blanc (60% skins, 40% whole bunch fermented), whole bunch Gewurztraminer and whole bunch pressed Pinot Noir Sauvignon Blanc is a fantastic grape – great acidity, great aromatics, great texture – and we wanted it to sing. Fermented on skins with a bit of Gewurztraminer, subjected to regular light hand plunging, pressed, then aged on lees for six months with what we can only describe as an intermittent – impulsive, even – stirring regime. We love this wine, distinctive and delightful like the sacred kingfisher it is named for.
Halcyon Days uses time-honoured methods to create living wines that are a dynamic expression of our reira in Aotearoa New Zealand. Halcyon Days wine is made with organic grapes from a BioGro certified Mangatahi vineyard, planted in loam over red gravel alluvial soils. Mangatahi is a sub-region of Hawke’s Bay on the southern terraces of the braided Ngaruroro river.
