An abundance of clarity and purity here, Meyer lemon juice and pith moving to a little lemon curd with salivating acidity. Vines are over 60 years old. It is destemmed, pressed, fermented in stainless steel, and aged for about 6 months. The malolactic fermentation is spontaneous. Before bottling, it rests 3 months in stainless steel deposits with its fine lees. Unfiltered, unfined and vegan.
