This wine is actually estate grown fruit from our property Nikau Farm (declassified if you will). It is 100 % Pinot Noir from the block directly in front of our house. It is the first wine I made from here after we took over the property in 2017.
The wine was made in the Momento Mori style… whole bunch, long ferment and skin contact and elevage in stainless steel & amphora. This differs from the Nikau wines since then as they are 100% destemmed, shorter time on skins and raised entirely in stainless.
It should be consumed chilled and in fact you should not even think about the fact this is Pinot Noir. It’s a chilled red and it’s a vibe !
This wine was a moment in time pre Nikau inception and before I had a complete vision for what I wanted the wines from our property to be.
It is one of a kind, energetic, pure and fresh and will never happen again.
