Chenin – Grown by Lulu in Blewitt Springs. Deep white sand on clay interspersed with schist. Sauvignon blanc – Grown by Jim Zerella in Peter’s creek (380m). Red clay interspersed with broken shale and quartzite. Chenin, destemmed and pressed to old French oak to age. Sauvignon Blanc, skin contact ferment in clay amphora, pressed after 11 months. Citrus and apples, long acid drive, very spacious on the pallet with an ethereal mouthfeel. – Jauma
