Tsukinokatsura has been working with local rice farmer to reinvent Kyoto original Sake rice ‘Iwai’ pesticide-free cultivation is used for more than 20 years. They do not want to polish too much – only 20% polished, so Iwai rice character will be present. Fermented by Kyoto local Sake yeast and matured in bottle for more than one year. Light gold colour with tropical fruits tone on nose. Fuller body with layers of flavour and umami. It has creamy texture.
