A barrel fermented saison – aged on local munstead lavender & wildflower honey
This is a passion project of Hannah’s, a unique expression of her love for nature and what we do here at Sobremesa.
The base of this blend is a spelt/triticale saison hopped with Strisselspalt & Motueka.
This beer went through primary fermentation in a neutral hogshead w/a belgian saison strain & two strains of Brettanomyces bruxellensis . This barrel displayed classic saison esters, earthiness & a subtle rustic funk.
We wanted to select a barrel that was young enough to enhance these bright ingredients without masking them. We blended on top of of dried munstead lavender from warratina lavender farm & wildflower honey from apiary made and left these to condition for 3 weeks.
Packaged on 13th Feb 2021 and bottle conditioned for 8 weeks.
Right out of the bottle the aroma reminds of us of the day we walked through the lavender farm. Aromas of lavender, jasmine and orange blossom. On the palate it sings meyer lemon & thyme.
