The Fruit is grown 500m above sea level and is on a south-facing plot. The terroir is a mix of stones, schist and volcanic soil as well as silt and a lot of sand. The vineyard has a zero tractor policy and no sulphur is used at all in the winery. Hand-harvested and biodynamic farming. 10 day whole cluster maceration, spontaneous fermentation in stainless steel with indigenous yeasts and aged in stainless steel. No fining, no filtration. Zero sulpur added. – Good Juice
