La Sirène is one of Melbourne’s stalwart breweries, experimenting with wild-fermented beers since 2010. Specalising in farmhouse, wild, oak-aged and coolship ales, employing centuries-old techniques and fermenting with wild inoculated yeasts.

La Sirène Praline was created for GABS in 2014 and was only intended to be a once-off creation. It ended up taking out the number #1 trophy for peoples choice that year and they knew it had to be brewed again. Over the years it has garnered a cult following and flash forward to 2024 and they’ve been making it for 10 years with no plan to stop anytime soon.

It’s a very special chocolate ale brewed with rich dark malts and combined with hand-scraped organic vanilla pods and Mexican cacao nibs, in their raw forms. Providing a velvety smooth dark ale. In true La Sirène style it is open fermented, adding a subtle acidity that makes an other wise rich ale refreshingly drinkable.
